Soft and juicy slivers of aubergine braised in a sticky garlicky sauce you’ll want to spoon all over your next bowl of rice. Handfuls of fresh basil lend a fragrant finish with toasted cashews coming in for a gentle crunch. Start by slicing a large aubergine into cubes.
